Pumpkin Snickerdoodles

I have a very hard time finding healthy cookies that my kids and hubbie will eat. They are definitely a work in progress!

These were a hit! Much to my dismay, I had to fight to get a few for myself. I will be making a double batch today.





PUMPKIN SNICKERDOODLES

Prep Time = 10 minutes
Cook Time = 10 minutes

Ingredients (I used all Organic)

2 1/4 Cups Almond Flour
1/2 tsp Cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/2 cup pumpkin puree
3 TBSP Melted Coconut Oil
3 TBSP Melted Raw Honey
1 tsp Vanilla
Optional: Flaxseeds

Topping
2 TBSP Coconut Palm Sugar
1 tsp cinnamon

Instructions
1. Preheat oven to 350 degrees
2. In a medium bowl, combine 4 dry ingredients (Almond flour, Cinnamon, salt, and baking soda)
3. In a microwave safe bowl, combine coconut oil and honey. Melt.
4. Add the vanilla and pumpkin puree. (Make sure the pumpkin is not cold or the cocount oil will harden.) Mix.
5. Add Wet ingredients to the Dry and mix well.
6. Place cookies on parchment lined cookie sheet.
7. Mix sugar and cinnamon together for topping
8. Gently sprinkle mixture on top of cookies.
9. Bake for 10-13 minutes.
10. Let cool and store in refrigerator.

Shakeology Truffles

These are a staple in our house. In fact, my hubby just asked my why I haven't made it in awhile.

1/2 cup Coconut oil
1 TBSP raw honey
2 scoops Shakeology (I use chocolate)

Add ins are optional (pb2 powder, peanut butter, any kind of nut, vanilla, etc.)

I usually just put parchment paper on a plate and pour the mixture onto it.

For a quick fix, put it in the freezer. Or put it in the fridge.

Store in fridge or freezer till gone.

Organic, Vegan, Vegetarian, No Sugar Added COOKIES

I made these cookies tonight and my kids even ate them!!!

NO ADDED SUGAR!

Only the sugar that God put on this earth via fruit!

I'm learning that sugar spikes our insulin levels to make glucose. But, if we eat God's sugar (from fruit), our insulin levels don't spike because our bodies don't have to fight so hard to make glucose.

HEALTHY COOKIE RECIPE!!

3 Mashed Bananas (I always put my ripe, uneaten bananas in the freezer for baking)
1/3 cup organic applesauce
2 cups organic oats (preferably instant versus rolled)
1/4 cup Almond Milk
1/2 - 1 cup raisins (or you can do healthy chocolate chips - I use Enjoy Life brand currently)
1 tsp vanilla
1 tsp cinnamon

Mix together. I used a hand mixer

Preheat oven to 350 degrees and bake for 15-18 minutes. I suggest checking at 15 and add if needed.

Refrigerate and/or freeze.



Vegetable Barley Soup

Vegetable Barley Soup - EASY

Step 1:
In a pot, saute 1 onion and 2 cloves garlic (or more if you like garlic) with 1 TBSP Extra Virgin Olive Oil

Step 2:
Add 4 cups Organic Vegetable Broth and 4 cups water

Step 3:
Add 1 cup Organic Barley
1 Zucchini or Yellow Squash
2 chopped carrots
1 stalk celery (optional)
1 large bunch kale (optional)
1 24 ounce can diced tomatoes
2 bay leaves
Any combination of italian seasoning
Salt and pepper to taste

Simmer on stove AT LEAST 1 hour.  Refrigerate and/or freeze leftovers!!
